I love having a healthy gluten free, dairy free lunch in freezer bags so I can pull it out of the freezer and thaw it in a bowl of hot water in a pinch. I just tried this soup for the first time today and it was so delicious. I topped it with a half of an avocado and a couple of crushed tortilla chips for some crunch. To make the soup just add the ingredients below to a crock pot and set to High for 3 to 4 hours. I was able to get this all put together in ten minutes this morning and when I got home at 1:30 lunch was waiting for me. - 1 Can Black Beans Rinsed and Drained
- 1 Can Chili Beans
- 2 Cans Diced Tomatoes with Green Chiles (I used Rotel)
- 1/2 C Diced Onions
- 1 Can Tomato Sauce
- 1.5 Tbsn Gluten Free Taco Seasoning
- 3 Boneless Chicken Breasts, Diced Into 1" Cubes
- 4 Quart Freezer Bags to Portion Left Overs and Keep in Freezer
